As is true for much of the country, racial diversity is much more common in larger city areas as opposed to rural and more sparsely populated counties.
For example, this 5-year ACS data map shows the percentage of Hispanic or Latino population from county to county in New York. When it comes to political policies, Democrats are often more focused on issues with racial justice. This leads people of color to typically lean democratic when voting, as these issues may be more relevant to them and their families. As seen on the map, there is a much higher concentration of Hispanic population in cities and coastal areas of the state. Counties with a lower percentage of people of color may be less concerned about policies concerning racial justice matters. Though this doesn't necessarily mean they will turn to voting Republican simply because of this, these counties do tend to see higher Republican turnout.
This map shows, as opposed to percentage, the number of Hispanic/Latino population in New York. While this map appears to portray little Hispanic population anywhere other than the cities and Long Island, we know from the previous map that there may be a higher percentage in some counties that are simply not as populated as the city. Montgomery county, for example, has a lower overall number, but in the percentage map we see that approximately 15% of the population is Hispanic. This shows how despite having lesser numbers overall, some counties may still lean Democratic due to a percent of the population being people of color. On a county by county level, percentage outweighs numbers in voter relevance.
This map is the 5-year ACS data from 2021, showing the percentage of foreign-born population per county. Numbers of immigrant population is highest in city areas, especially New York City, Buffalo, and Rochester. As well as the cities, Long Island has a much higher immigrant population; due to its location on the coast, Long Island is an extremely popular location to settle for incoming immigrant population. Policies giving easier access to citizenship for this population will be favorable to them. The Democratic party typically tends to be more immigrant-friendly, which would lead many of these foreign-born population voters to lean Democratic. New York City and Long Island have a very large overall population, and with such a high percentage of these populations being immigrants these areas are given a huge Democratic advantage in polls.

New York is always an interesting case for things such as this. With just how different the comparatively small New York City is to the rest of the state, it showcases some interesting patterns, whether that be ethnicity, political views, or almost anything else. The influence of the city is massive for its small size.
